Black drum is one of my favorites, you felet them like any other fish, careful to remove the bones from the rib area and fry, bake, broil or even grill them with your favorite seasonings. Sheepshead are the same except be careful when feleting them they are very spiny as with most fish but sheepshead are a little extra work. If you like shell fish like oysters you will love sheepshead, they have a flavor similar to oysters. I prefer to pan fry them.
thanks john, sometime i catch these fish while fishing for reds and specks and some of the guys i fish with throw them back thanks for the info.
I usually throw back any sheepshead I catch but I keep every drum I can. The closer to the 14" mark the better the eating. Drum have a texture very similar to red fish. They are very good eating.
yum Drum cooked in light olive oil a pat of butter and fresh garlic is how my family likes it. Can do same for sheephead.
Black drum and Red drum are just sub species of the same fish, both have same texture and cook up very well. It is a firm mild flavored meat. They are great fried, broiled or grilled! If you buy it sometimes the Black drum is less expensive. Ignore all the myths! LOL

Sheepshead is a great fried pan fish that lives off mullosk that attach to pilings and structures. The diet gives them a distinctive flavor, delicious.
